This is the first, certified organic Stravecchio cheese from the Parmigiano Reggiano D.O.P. region that's been available in the United States. This extraordinary example of cheesemaking craftsmanship and tradition immediately becomes the crown jewel of the region's cheese production. Relying on 3 simple ingredients of extraordinary quality (organic milk from local alfafa-fed cows that graze select hillside pastures, rennet and salt) a master cheesemaker handcrafts 6 wheels of cheese each day. These wheels are then further inspected for quality and less than half go on to full 36 month aging. It is this very limited selection that is certified organic, stamped with the D.O.P symbol and named Stravecchio (meaning extra aged.) Using traditional methods virtually unchanged for a hundred years, the small-farms in the hillsides outside of Parma Italy continue to be the only place in the world sanctioned to produce this very exclusive cheese varietal. With its unique nutty flavor profile this organic production is undeniably the highest quality and most sophisticated yet. This stuff is AMAZING! |
